For Prof. Perolo’s fish farm it was curated the construction of a weaning and pre-fattening hyper-intensive sector of young eel. In this plant it has been used a very high density population technology, in supersaturated of oxygen water at a controlled temperature with biofiltration plant and total water recirculation. The functioning of the plant is controlled and monitored in every instant through a computerized supervision system in order to keep the physical-chemical water parameters always constant and effective for the farming
